Each bánh xèo is freshly prepared, spread thin on the pan until golden and crisp around the edges, with the fragrant aroma of rice batter and coconut milk.
The fillings change with the seasons, from freshwater shrimp and pork belly to bean sprouts and local root vegetables, all prepared with fresh ingredients selected or gathered that day.
Wrapped with an assortment of garden herbs and greens, then dipped in sweet-and-sour fish sauce, bánh xèo is simple yet deeply satisfying.
